Decoction

How many Franconian brewers decoct their mashes though? I think we've kicked this around before, but I just can't recall.

Indeed, Germans IME are quite concerned about freshness in bottled beer. Maybe not so ridiculously as the crafty kids today and their concern that a hoppy IPA will go bad after a week in the bottle, but still, sensibly so.

Lagering before bottling is all a lager needs, I think.
