A couple of observations on decoction

The Eschawo brewers don't use the term double decoction, they just call the same process a double mash.
Do you still not understand why they put the grain  in the sud pfanne? I think that its the only way of achieving the initial temperature. The water from the storage tank that feeds the maischbottiche is not so hot. Anyway, this is fairly hearsay, I'll try to speak to the brewer anand find out more precisely.
