A couple of observations on mashing

Verstanden. But I think the way most brewers do it is heat the water in the Tank or Sudpfanne to x° (determined through experience -- hotter than the mash will be, as heat will be transferred to the malt and to the Bottich) and pump it into the Bottich while adding in the milled grain.

What I don't understand is why he heats both the grain and the water in the Sudpfanne, and then pump that into the Maischbottich.  He essentially "mashes in" in the Sudpfanne, not in the Maischbottich. I'm not saying that's not a (the) right proper way to do it, I just want to understand why he does it that way, since I've seen it done the other way.
