| Mostly to do with customer satisfaction Jason.Even if they manage by good brewing practice to keep a good amount of co2 suspended in solution (in the cask) by the end of dispense,and possibly well before, the beer will lack the expected by german standards,"condition" and will seem flat and lacking a head.so the addition of gas will ensure no customer complaints re flat beer. |
