Diacetyl

There are a few breweries in New England that can trace their origin to Pugsley.  Some of them still use the Ringwood yeast.  Shipyard in Portland, Maine for example.  Woodstock Inn and Brewery in New Hampshire is another.  All their beers have that same underlying Ringwood yeast flavor.  I used it in a homebrew once to see how it would turn out.  It ferments pretty fast and flocculates very quickly so you wind up with a clear and ready to drink beer in no time.  I suppose it's very economical and why they use it.  Not a great flavor though.
