Well as far as I'm aware that is very much a northern concept, and since we are relatively close to Plsen I would have hoped that such practices would be avoided around Franconia. The great pilsners of the Czech Republic often have huge heads of foam and yet the beer is extremely low in carbonation. Hence why I love them. They also keep their heads and it creates those lovely rings round the glass - one sign for me that a British real ale is in good condition. I certainly think there would be some riots in Czechia if they came up with some nonsense about needing 7 minutes to pour a beer.

One could say beer is 'supposed' to be dispensed from a barrel without additional carbon dioxide. That CO2 is a byproduct of fermentation and there is no need to add any in addition. Then again, I have had beer dispensed from keg that is set at a very low level of carbonation, Liecht in Pferdsfeld and Ochsen in Spielbach being notable examples. These are excellent beers poured served well.

Also Rittmayer in Aisch - incitdentaly were I will be enjoying dinner in a few hours :)
